Is Day.ai worth it if you are selling alone?

The free tier is not a trial. Meeting recording, transcription and contact building all run at $0 indefinitely. The line that matters for a founder is $60, because that is where deals exist at all, and a pipeline you cannot see is the whole reason you were looking for a CRM.

Can I really run this on the free tier?

For capture, yes, indefinitely. You get the recorder and the contact graph. You do not get deals, which most founders want within a month.

What happens when I hire someone?

They join free and can search, view and share. You pay when you deploy an agent to them, so the bill follows the work rather than the headcount.

Is it too young to bet on?

Roughly 120 customers and funded by Sequoia and Bessemer. There is no documentation site, no changelog and their Discord invite is dead, which tells you where the company is putting its effort. Keep your billing elsewhere and the risk is manageable.
